Erik's Mashed 'Taters

  • 5-6 Idaho potatoes
  • 3/4 cup of milk
  • 2 Tbsp butter or margarine
  • 1 Tbsp garlic salt
  • 1 Tbsp oregano
  • 1/2 cup grated Parmesan cheese

Cut potatoes and boil in water until tender. Drain water and use masher. Add milk and butter and mash until mixed. Add garlic salt, oregano and cheese and mix well with masher or large spoon.

Disclaimer: My measurements are estimates as I eyeball a lot of things. But I made this last night as a side for my BBQ ribs and they got rave reviews from the kids.

I was about to be impressed that you had actual measurements for making mashed potatoes, but even estimates are awesome. I don't have the foggiest idea how much of anything I use when making mashed potatoes.

The real question here, though, is why you'd want to ruin potatoes by adding cheese.  arghh

Instead of milk, use heavy whipping cream and an electric mixer. And really, there's nothing wrong with cheese!
